My Top Secret Weekend Recap!

My Top Secret Weekend Recap!

I wish writing about my "top secret weekend" would include stories of how Dewayne "The Rock" Johnson professed his love for me, took me on a tropical vacation, and romantically proposed... but... not so much, ha. My top secret weekend was all about surprising my mom and dad, and I could not write about my plans on here before since they read my blog. I really put my heart into this weekend so I did not want anything to ruin it. It was both Fathers Day and my moms birthday! Both of them I had no idea I was coming. I made little white lies stating why I couldnt come. Little did they know...

Friday after a crazy busy day at work, I went to the gym for a leg workout. I pushed hard and felt great. After I went to get groceries. Once I got home, I got to work preparing my mothers birthday cake. Her favorite dessert is "smores" so I wanted to make a cake going with that theme. Naturally I checked on Pintrest earlier in the week, but the ideas on there were too grandiose for me. Thus I made my own! Yall know I love creating recipes so I thought I would give a shot. I made a chocolate fudge cake with vanilla and marshmallow mix as the icing, then topped it with graham cracker crumbs and a caramel drizzle. It did not look at that pretty, but everyone loved it.

I then put moms gifts together. She has had a really hard year; between her MS, separation, and other family problems, it has been really, really difficult for her. So for her birthday this year, I really wanted to make it personal and fun. I got her a sterling silver necklace engraved with the word "Gammy" and a personalized photo book filled with pictures of me, my brother, sister-in-law, nephew, and other family members. My nephew Brantley means the world to mom - he is her reason for living. She loves being a "gammy".  After I finished her cake and putting her gifts together, I packed, got a shower, and I think I was asleep before my head hit the pillow on my bed. I was worn out.

Saturday morning when I woke up, I wanted to go to the gym before making the drive back to my hometown. But I was so sore I could barely walk. When I got out of bed, I felt like a walking zombie. So, I scratched that, threw the rest of my things together, and took off. I arrived to my brothers around 2 PM. I walked in with mamas cake and gifts, and the look was on her face was priceless. Can you guys believe she is 51 years old? She looks so good, and not a drop of plastic surgery. I know I look older than I am, but so did she when she was my age, so I am looking forward to getting older, ha!

The rest of the afternoon my sister-in-law and I did my "Hot Mess Express" workout outside then came back to start getting ready. Mom thought her cake and gifts were her birthday, but no, I had more up my sleeve! My extended family is not very close. I wish we were-- I want the kind of family where you get together for dinners, parties, events, and such every weekend. Unfortunately everyone has their own thing going on, so it isnt like that. However, for my moms birthday, because she has been having such a hard time, I knew I had to get everyone together to surprise her for dinner. Everyone came through and mom was literally shocked when we got to the restaurant; she could not believe everyone was there. I felt the same way. It filled my heart with so much joy to have my family together like that!

We literally had the best time. My mom had a lot to drink - I totally have her hooked on Fireball whiskey now! Actually, everyone had quite a bit to drink... except me. I am getting old and boring now. I ordered my favorite shot "Royal Flush" and only drank about half of it, I just wasnt feeling it. But I had a blast listening to everyone else.I dont even remember how many shots of tequila and whiskey my family consumed. I have to give a big shout out to my old high school friend and fellow cheerleader, Tara, for taking such amazing care of us!

We even ordered my nephew a virgin Strawberry Daiquiri so he would not feel left out, ha!

This morning I was up bright and early to drive to the next town over to surprise my dad at church. I was actually really worried about surprising him! When I talked to him on the phone yesterday, he sounded really disappointed that "I couldnt come". I felt so bad that I almost told him. Also he was telling about how his new cancer medication is hurting his legs and feet so bad that he probably was not going to go. But God knew my step-mom and Is plan, and I got a text this morning from her saying that he felt well and was going to church. When I got there, tapped my dad on his shoulder, I saw him slightly turn his head to politely say hello back, and finally after about 10 seconds or so, he realized it was me. He was so shocked and it was the best feeling. My dad is such a fighter, and despite of his awful cancer, he tries so hard everyday to live as normal as possible. It was "Youth Sunday" at church and one teenager shared her testimonial about her faith, and it was really moving. I related so much as she spoke about going through such a difficult heartbreak. Once church was over, we had lunch together, then dad and I watched the DVD I got him. My dad LOVES "The Beatles" so I bought him all of the episodes of "The Ed Sullivan Show" that they starred on. We had a blast watching it -- he was singing and dancing around in his recliner.

I left my dads around 3 PM to take off to Greensboro to spend time with my wonderful grandparents. I am SO close to them - they are like another set of parents for me. I had to spend time with my papa for Fathers Day. My grandmother and I had a relaxing time sitting outside in her new outdoor room that she recently had screened in. There is nothing better than sitting out in the country, listening to the birds, feeling the warm sun, and talking with people who means so much to you. Then for dinner, papa made his famous porkchops on the grill. It was a lot of fun.

Im now in my "bedroom" at their house -- the upstairs loft. I decided to stay the night with them because I simply love staying here; its home. Plus I am exhausted. I am happy to be off of work tomorrow, but have a lot to do when I get back to Charlotte. Food prep, cleaning, and the gym, of course. I am ready to break my plateau and see some good results! But first, a good night of sleep. Tomorrow I will resume taking on the world...

My Fun Girls Weekend Recap!

My Fun Girls Weekend Recap!

It has been a really fun, nonstop weekend! I have talked about how busy work has been and the long hours I have been working, and the weekend was just the same, ha! There is no rest for the wicked... except for this upcoming one! I cant wait.

My mom and sister-in-law arrived at my apartment around 3:30 PM on Friday. I was still working and then hit the gym for leg day! Fridays are my hard leg workouts so I couldnt miss it. I pushed hard and it felt great.

After the gym I met my crazy girls at home so I could get ready. We then went to one of my favorite restaurants "Cantina 1511". Mama and Amber love Mexican food, so I wanted to show them my favorite spot that is authentic and fresh. We enjoyed our dinner and cocktails on the patio while a man sang and played the acoustic guitar. You cant beat that! I ordered my strawberry and mint Mojito, mom had Sangria, and Amber had a passion fruit Margarita. Mom of course had to get a shot of Fireball whiskey. I have created a monster, yall. Homegirl loves her whiskey now. After dinner, we went to see "22 Jumpstreet". That movie was absolutely hilarious. I have not laughed that hard in a long time. It is a must see!

Saturday morning we slept in then spent the day shopping. Mama and Amber wanted to get some sexy new clothes for an evening out. With Mama being single and ready to mingle, we have to keep her looking good. We went a ton of places and had a lot of fun. I scored a cute new pair of heels, a strapless dress, and SMORES FLAVORED protein powder! Yum!

When we got back to the apartment after shopping, Amber and I were going to lay out by the pool for a while. However, it started to storm (of course). So she and my mom made a pizza and I took off to the gym! I did 45 minutes of cardio -- 25 on the StairMill and 20 on the Elliptical. I was so proud that I went - especially since it was a rest day. I did not want to be around pizza!

We then took showers and got glam for another evening out. I wore my new sexy Corset top from Venus and I was ready to be a man-eater, ha! Kidding. I got cute pictures of mom and Amber, but they were not reciprocating. The pictures they took were hilarious. We could not get it right.

Once we were ready, we went and ate Asian for dinner then took off to a local bar, "Bradshaws Social House" for drinks and to mingle. I sipped on the best drink. I LOVED IT! It was Skinny girl cucumber vodka, club soda water, and fresh cucumbers. That may sound weird to some, but it was so light and refreshing. If and when I drink this summer, that will be my go-to drink. I HATE drinks that are made with syrup that is loaded with sugar, so this is a great alternative without a ton of calories and sugar. My mantra is all about balance. I say go out and enjoy yourself, but keep it as healthy and you can. Those little victories completely add up.

This morning mama and Amber left around 11. As soon as they walked out of the door, I got right to work. It was such  a productive day! I did 3 loads of laundry - including all of my sheets and bedding. I then went to Target and Earthfare for this weeks groceries.

When I arrived back home, before I got to cleaning and food prep I tried out a new recipe. Last night, my best friend Anna asked me to try and create a cleaner version of "Cake Batter Pancakes". I loved the idea so last night at 2 AM when I was in bed, I was putting a list together of ingredients, comparing calories, and just being the little food scientist I am sometimes, ha! I think I developed it so I went and got the ingredients  today while doing my regular shopping. Ladies and gentlemen, I think we have a winner! I will be sharing the recipe Thursday.

Once my trial of cake batter pancakes were finished, I got knee deep into cleaning and food prep. Unfortunately I will have to go out and buy more chicken tomorrow, I did not realize how little I had left (oops!). I then got in a 40 minute plyometric full body workout -- my hot mess express!

Now I am off to soak in a bubble bath then cuddle on the couch to watch the rest of the last season of "True Blood" and then the new season starts 9! I am SO freaking excited but also really, really sad. True Blood is my absolute favorite show of all time. I have read and own all of the Sookie Stackhouse books AND all seasons of "True Blood". That show is literally my favorite of all time. I feel such a connection to Sookie and people tell me all of the time I look like her - I even have the gap in my teeth like she does. It breaks my heart to see this ending. Oh well, at least I will always have the books to read and seasons to watch.

I hope everyone has a fantastic week. I am ready to kick it in high gear, burn some fat, and work over this plateau. I was able to play a lot and let loose this weekend so now its time be focused!

My Simple Fall Weekend Recap

My Simple Fall Weekend Recap

My weekend was so nice. It was not very eventful though. It was quiet, but I got some great rest and I felt super productive. As I am getting older, I cherish weekends like that, ha!

Friday after work, I went to the gym for 45 minutes of cardio on the Elliptical and an upper body weight circuit. Since I boxed on Thursday evening and my pushed myself extremely hard, I felt just as motivated Friday. I lifted very, very heavy -- heavier than I have in a while.

After my awesome workout, I came home to shower and get ready. I then met Alexis and her husband Daniel at our favorite local spot; Cantina 1511. We had our favorite strawberry Margaritas and dinner. I had so much fun -- we three always do! Tons of laughs and good food and drink is my favorite way to start the weekend.
Saturday morning I woke up more sore than I have been in a long time, which was a great feeling. Because of what I have been going through over the past month, my weight loss has been a little stagnant and I have not been pushing myself to the "limit" like I normally love to do. I busted through that though and my body paid the price. Though I was up early since I slept great Friday night, I was really lazy through the early afternoon.

I did rent a good documentary on demand called "Fed Up". It was utterly disturbing, sad, but a must see. It revealed how the biggest food companies in United States effect the "truth" as we know it about health and nutrition. I dont know about you guys, but to me, it is disheartening knowing that companies like Coke and Lays fund a LOT of university research, federal organizations, and politicians. The documentary also focused on the effects that sugar has on the brain (which is similar to cocaine), and childhood obesity.

Later on in the evening I finally got a burst of energy so I did a little food prep, laundry, then completely cleaned out my closet. The weather has been so nice this weekend and a bit chilly. I think fall is here to stay, thus I decided to pull out my warmer clothes and put up the summer ones. Doing that gave me the inspiration to clean and organize my closet.

The fun did not stop there though, ha. Afterwards I cleaned out the big cabinet below my bathroom sink, which looked like train wreck. I am constantly getting my hair tools and makeup out of there so it was a mess. The before and after clearly shows that!
Today I caught an early showing of "Gone Girl". I was so excited to see it and it was even better than I thought it was going to be. It was such a freaking good movie; lots of twists and turns with great acting. It is a must see and now I want to read the book. Usually when I go to the movies, I indulge in the "Kids Pack" popcorn/gummy bear/soda combination, but I am trying to be better, so I resisted and brought my water and Quest Bar. Ugh, the struggles... but at least my protein bar is delicious.
Once the movie was over, I knew I had to go outside and take advantage of the beautiful afternoon so I went for an hour jog/walk on the greenway behind my apartment.

I am not as sore, so I had a really good jog. When I finished I took a shower, ate an early dinner, then finished the rest my food prep for the week.

Now its time for my Sunday night shows and I am super happy that Bar Rescue is back tonight. I hope you guys had a great weekend that fall is headed yalls way!
